WaterColor's late-summer schedule ends on October 31. The holiday season schedule starts November 1 and runs through January 1, 2027. The new schedule mostly cuts back the weekdays. Beach Cow closes for the season. The Canteen at Camp WaterColor drops to Wednesday through Sunday. Costa Chica opens only Thursday through Saturday. WaterColor Grill keeps its later dinner hours for Thursday through Saturday only.
That leaves a week with a Thursday-to-Sunday core, and the big fall dates already fall inside it. The one requirement that runs ahead of that core comes from the Association, not the resort. Guest wristbands now need to be requested and paid for at least 48 hours before a guest arrives. If you're hosting family over Thanksgiving, Thursday doesn't start your week. Your planning starts on Monday.
Here is how the published holiday season hours fall across a normal week:
Fish Out of Water's regular hours are the same before and after November 1. The late-summer and holiday schedules both list 3 to 9 PM Monday through Thursday and 11 AM to 9 PM Friday through Sunday. It's also the venue with the most continuity on its menu this year. St. Joe announced separate lunch and dinner menus there in April, under Director of Culinary Chef Louis Martorano.
The weather matters too. The resort's schedule says outdoor venues close on any day that's 50°F or colder. That rule covers Beach Services, the Tiki Bar, the Beach Club venues and Camp WaterColor. In December, check the forecast before you count on lunch at Costa Chica.
October and November don't spread WaterColor's major events across the week. Every one of them lands on a Friday or Saturday, or on the long Thanksgiving weekend.
The Destin Charity Wine Auction Foundation's 10th annual Harvest Wine & Food Festival runs October 15 through 18. Harvest After Dark is at Cerulean Park on Friday, October 16, and the Grand Tasting is there on Saturday, October 17. The resort's general events page still lists last year's details, a ninth annual festival on October 16 through 19. The foundation's own event page has the current dates.
The 26th annual WaterColor Mountainfilm on Tour runs Friday, November 6, and Saturday, November 7, at Marina Park Amphitheater, 238 WaterColor Blvd. W. Gates open at 5:45 PM and films start at 7 PM. Organizers say event parking will be limited. They suggest parking at the Van Ness Butler Jr. Regional Beach Access, 1931 E. County Hwy. 30A. The free on-demand WaterColor Trolley runs 9 AM to 7 PM daily, so its listed service ends right when the films begin. Trolley hours may also change seasonally.
Thanksgiving week packs the most into the shortest stretch. Here's how it runs at the venues and in Cerulean Park:
Fish Out of Water stays open 8 AM to 10 PM from November 27 through November 29. From Thursday to Saturday of that week, the dining and events run almost nonstop. That's also when your guests are most likely to be in town.
The venues gear up for Thursday. The Association's guest process works on a different schedule. In February 2026, the Board of Directors approved an amendment to the Guest Fee Policy. The Association announced it on March 27:
"The amendment requires that guest wristband requests and Guest Fees be submitted at least 48 hours prior to a guest's arrival."
The notice says requests made less than 48 hours ahead will be handled "as staffing and operational capacity allow" and in the order received. Full payment of Guest Fees is required before processing of a wristband request can begin.
Here's how that works for Thanksgiving week. For guests arriving on Wednesday, November 25, request their wristbands and pay the fees by Monday, November 23, at the same time of day they'll arrive. For guests arriving Tuesday, the deadline moves to Sunday, November 22. Late requests can still be handled, but that's the busiest week of the fall, and they wait their turn behind everyone else's. The same timing applies to the Mountainfilm weekend and the stretch from Christmas to New Year's.
The Association also has an Amenity Closures page with current alerts when a pool, slide or other amenity closes for maintenance or safety. A guest who arrives with a wristband and a plan for Camp WaterColor will want to check that page first. The Camp's retail area closes from December 1 through February 28, 2027, even while The Canteen keeps its Wednesday through Sunday hours.
One amenity residents are waiting on isn't on the holiday schedule. The Association posted on February 25, 2026 that crews had begun work on the WaterColor Tennis Center redevelopment in February. Tennis stayed open, and check-in for reservations, drills and lessons moved to a temporary Pro Shop trailer. The pickleball courts closed. The notice said, "We're sad too, but look forward to more courts in the fall!"
The latest official update is a time-lapse video the WaterColor Community Association uploaded on September 30, 2026. It shows construction of the new pickleball courts. Its caption says the new Fitness Center and pickleball courts "are slated to reopen later this year." A 30A.com guide updated October 3 expects the renovated center to reopen in fall 2026. It lists six pickleball courts, a new fitness center and a new pro shop, plus the existing five Har-Tru clay courts. No public reopening date has been announced yet.
Until it reopens, the February guidance still applies. Parking at the center is limited, and temporary gravel parking pads are on Western Lake Drive and Dandelion Drive. The Association asks players to carpool or take the WaterColor Trolley. If your holiday guests play tennis, they can still book clay courts this season. If they're coming for pickleball, the courts may not be open yet when they arrive.
If you're hosting this season, the guest rules and amenity timelines matter as much as the dinner reservations. That kind of detail also shows up in contracts and HOA documents when a property changes hands. At 30AMY HOMES, Amy brings a lawyer's attention to that fine print for WaterColor owners and buyers.
